Vegan Apple Cider Cake * Apfelweinkuchen *

I need to share a cake recipe, because it is just too good. Click here for the German Recipe.

For the Crust:

250 gr Flour
½ pack baking powder
125 gr sugar
1 pack vanilla sugar
150 gr butter (vegan) or margarine
2 tbs Water

For the Filling:

800 g apples
400 ml apple juice
350 ml apple cider
2 pack vanilla pudding powder
6 tbs Sugar
1 pack cream
Cinnamon for dusting the cake

Directions:
Mix ingredients for the crust and press the dough in a spring form (26 cm). Let the crust come up on the sides. Peel, core and cut apples. Spread them on top of the crust. Cook pudding powder, cider, juice, sugar and vanilla sugar according to the directions for the pudding mix. Pour the hot pudding mix over the apples in the spring form. Bake for 60 minutes at 180°C. Let cake cool completely (best is over night), before taking it out of the spring form. Whip heavy cream and spread it on top of the cake. Dust cake with ground cinnamon. Key is to let the cake cool completely before topping it with whipped cream. Keep it refrigerated, so the cake does not fall apart..
